Hello friends, today we are bringing Gujarati Steam Dhokla. Which is a very famous and popular dish in Gujarat.

Ingredients

Dhokla Batter:

  • 1 cup gram flour (besan)
  • 2 tablespoons semolina (rava )
  • 1 teaspoon ginger-green chili paste
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • ยฝ teaspoon turmeric powder
  • 1 teaspoon fruit salt (eno) or baking soda
  • Salt to taste
  • ยพ cup water

Tempering:

  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • 1 green chili, slit
  • A few curry leaves
  • A pinch of asafoetida (hing)

Garnish:

  • Freshly grated coconut (optional)
  • Chopped coriander leaves

1. Prepare the Batter:

  1. In a mixing bowl, combine gram flour, semolina, sugar, turmeric powder, and salt.
  2. Add ginger-green chili paste and lemon juice to the dry ingredients.
  3. Gradually add water and whisk the batter to ensure it is smooth and lump-free.
  4. Let the batter rest for 10 minutes to allow the semolina to absorb moisture.
  5. Mix gently in one direction to activate the soda. The batter should become frothy and light.

2. Steam the Dhokla:

  1. Grease a steaming plate or a cake tin with oil.
  2. Pour the batter into the greased plate and spread it evenly.
  3. Place the plate in a preheated steamer and steam for 15-20 minutes on medium heat.

3. Prepare the Tempering:

  1. Heat oil in a small pan.
  2. Add mustard seeds and let them splutter.
  3. Add sesame seeds, green chili, curry leaves, and a pinch of asafoetida. Sautรฉ for a few seconds.
  4. Pour the tempering evenly over the steamed dhokla.

4. Garnish and Serve:

  1. Sprinkle grated coconut and chopped coriander leaves over the tempered dhokla.
  2. Serve warm with green chutney or sweet tamarind chutney.

Tips for Perfect Dhokla

  • Use fresh fruit salt or baking soda for the best results. Expired leavening agents may affect the fluffiness.
  • Do not overmix the batter after adding the leavening agent, as this can cause the batter to lose its airiness.
  • Steaming on medium heat ensures even cooking.
